Slow Cooker Lentil Soup
This slow cooker lentil soup is delicious, hearty, and easy!

- 3 cups carrots chopped
- 3 cups celery chopped
- 2 medium onions chopped
- 16 oz green lentils rinsed
- 3 cloves garlic minced
- ½ tsp dried thyme
- ½ tsp salt
- ¼ tsp pepper
- 10 cups chicken broth
- 2 large bay leaves
- 8 oz spinach optional
Place all ingredients, except spinach, in slow cooker
Cook on low for 6 hours
Optional: once finished cooking, add fresh spinach and stir until wilted.
In place of chicken broth, I prefer to use better than bouillon.
