Can you ever go wrong with a hearty delicious soup in the dead of winter? This Slow Cooker Lentil Soup is so simple yet so satisfying!

Expecting a cold snowy day? Start your slow cooker in the morning, head out in the snow for some fun with the kids, then come in and warm up with some scrumptious lentil soup.

There are very few things I like about winter, but to winter means soup, and that’s something I love! There is nothing more satisfying that a hot bowl of soup on a dark and cold winter night. We have a local Greek spot that makes the most delicious lentil soup, so this winter I tried my hand at recreating it, and I nailed it on the first try!

One thing you’ll come to see here is I do NOT like to spend all day in the kitchen, so I love creating recipes with my slow cooker. Literally chop, dump & go. It could not be any easier. This slow cooker lentil soup checks all of those boxes.

Will I have leftovers?

This recipe makes a lot, 14 one cup servings to be exact. I typically have two cups as a single serving for a meal. It freezes really well too. I like to divide up individual size portions for a quick lunch or dinner.

What can I serve with it?

This slow cooker lentil soup filling enough on its own, but feel free to pair it with a sandwich or side salad if you’re one of those “soup isn’t a meal” people! If you’re looking for extra hearty, you can add a small pasta like ditalini. A nice warm pita to dip would be delicious too. Try adding a tablespoon of grated pecorino romano cheese to take it up a notch.

Equipment

  • Slow Cooker

Ingredients
  

  • 3 cups carrots chopped
  • 3 cups celery chopped
  • 2 medium onions chopped
  • 16 oz green lentils rinsed
  • 3 cloves garlic minced
  • ½ tsp dried thyme
  • ½ tsp salt
  • ¼ tsp pepper
  • 10 cups chicken broth
  • 2 large bay leaves
  • 8 oz spinach optional

Instructions
 

  • Place all ingredients, except spinach, in slow cooker
  • Cook on low for 6 hours
  • Optional: once finished cooking, add fresh spinach and stir until wilted.

Notes

In place of chicken broth, I prefer to use better than bouillon.
